Happy Leap Day!

Woke up early this morning. I have been fighting this cold and the medicine I am on makes me so sleepy. So going to bed early means waking up even earlier. Because I had a few extra minutes this morning, because it was National Pancake Day yesterday (yay!) and because I am running low on my supply of egg whites due to my muffin mishap, I decided to give my own version of protein pancakes a whirl.

Base ingredients

I combined a few of my favorite ingredients from my favorite recipes to perfect this little nugget (shout out to TIU and PBfingers for inspiration!). And I tested it out on Kyle this weekend and it got his approval. I know anything I cook that he likes is blog-worthy 🙂

Berry Protein Pancake

  • 1/3 cup vanilla protein powder (Today I used Sunwarrior brown rice protein)
  • 1/4 cup non-fat plain Greek yogurt
  • 1/4 cup egg whites
  • 1/3 cup of applesauce or 1/2 a mashed banana
  • 1/2 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1-2 Tbsp. water
  • 1/2 cup frozen berries of choice

Combine the protein powder, yogurt, egg whites, , mashed banana OR applesauce, cinnamon, vanilla and water (use just enough water to loosen up the batter to pouring-consistency). Pour pancake batter onto a hot frying pan, greased with cooking spray, over medium-high heat. I like to add the berries by hand at this point–you can sprinkle them on to the pancake right after your pour the batter into the pan for perfect berry placement (you know–a bit of berries in each bite is like having the finer things in life 🙂 ).

and by perfect berry placement, I mean a blueberry smiley of course.

Here is where the pancake gets a little tricky. Flip the pancake when you see bubbles forming on the edges. The trick is to slide the spatula under the cake just once to loosen the cake from the pan–then flip.

I only know this trick because that is how I flip normal pancakes. Protein pancakes, on the other hand, are a little more delicate and I have a  terribly hard time flipping them. So when all else fails, create a pancake pillow.

Pancake Pillow: a pancake that has been scrambled up because the pancake flip failed. (Synonyms: pan(pillow)cake, pillowcake, pancake-that-just-doesn’t-look-right-but-tastes-amazing)

The greek yogurt from the batter makes this pancake pillow really fluffy–hence, pillow. And you may think that this looks weird–but don’t be fooled. It’s delicious. I will just have to wait for the day when I can perfect my protein pancake flipping skills! I hope you are able to flip ’em, but if not…. just know you are not alone 😉

This morning I got in my cardio and yoga for the day. And tonight I plan on making a pretty hefty to do list to round out my week and a packing list to get myself started for Spring Break Cruise prep!
