How I Eat More Tomatoes (Part 2)

I have been on a tomato kick this week, and it is kinda freakin’ me out…considering I don’t really like the fruit. (Yes! It is a fruit!)

After my neighbors, Jim and Jennifer, blessed me with their great salsa recipe, Jennifer also gave me a recipe for gazpacho. She said she loves it because she lived off it when she traveled abroad to Spain. Now, I have heard of the cold soup…but who wants to eat cold soup?! It always sounded odd to me.

Gazpacho: a spicy soup that is usually made from chopped raw vegetables (as tomato, onion, pepper, and cucumber) and that is served cold

I like all the other veggies in its description, so I decided to give the weird soup a try, and it’s actually pretty tasty. Not to mention it is literally just a blend of veggies and a few other ingredients. This is clean eating at it’s finest!

Spicy Gazpacho (adapted from Jim and Jenn’s kitchen!)

  • 5-6 really ripe tomatoes (I used on-the-vine)
  • 1 green pepper
  • small yellow onion
  • 1-1/2 tsp. minced garlic, or 3 cloves
  • 1-2 jalapenos (optional–if you want a little kick!)
  • 1/4 cup extra virgin olive oil
  • 3/4 cup vegetable stock
  • 1/2 cup apple cider vinegar
  • 1 tsp. black pepper
  • 1/2 Tbsp. sea salt

Chop the tomatoes, onions and peppers so they can be easily blended. I also de-seeded the green pepper. And don’t forget to remove all the stickers on the veggies or you’ll end up having to hunt down the pieces like this…

Load all the ingredients into a blender.

And, as Jenn says, BLEND THE BONANZA OUT OF IT! (aka, blend for about 7-8 minutes. It will turn a nice orange color).

Let it chill overnight, and it is ready to eat! I like mine with a little sprinkle of cheese. Goldfish are also surprisingly good in it 🙂

What do you think of cold soup? Honestly, it took me a few bites to get used to. But I really like it now. All the tomato goodness, without the weird squishy texture.

I’m off to teach swim lessons and then get some miles in for my 100 mile challenge! I am on mile 27!

    Tomato is one of my favorite spring/summer foods. My mother grew them in our garden every year and we would eat them with a little salt…prefect! I will have to try the Spicy Gazpacho it sounds really good.

      My dad loves to eat tomatoes with salt, too. I’m not up to that point in my tomato-eating yet, but maybe one day 🙂 thanks for reading!
